A Vegetarian Fry Fest

Vegetable Pancakes
    I’ve been buying coarsely grated carrots. They're now carried in so many produce sections. They can be used in many ways, raw or cooked. These crusty patties make a wonderful vegetarian meal or a side dish with meat from the grill.

3/4 cup flour
1 teaspoon salt
1/4 teaspoon pepper
2 eggs
1/4 cup water
½ cup oil for frying
1 cup thawed hashed brown potatoes, dabbed dry with paper towels
1 cup grated carrots
Medium onion, finely chopped.
1 teaspoon minced garlic

    Make a batter by whisking flour, salt, pepper, eggs and water. Fold in vegetables and drop pancake-size blobs in  hot oil. Fry until crusty and golden on both sides. Serves 4.
