Bracing Barley Soup
The camping season is here but nights are still chilly. Make a pot of this healthful soup to build an inner fire.
32-ounce carton of low-sodium chicken or vegetable broth
1 cup finely cut up smoked turkey sausage OR
2 hot dogs, finely chopped
Small can mushrooms, drained
1 teaspoon minced garlic
Small onion, diced
Medium sweet potato, peeled and diced
Large carrot, peeled and diced
½ teaspoon dried thyme
1/3 cup pearled barley
Salt, pepper to taste
Put everything but the barley in a saucepan and bring to a boil. Add barley. Cover, reduce heat and cook 25 minutes until vegetables and barley are tender. Adjust seasonings, ladle into soup bowls and garnish with a dollop of sour cream. Serves 4 to 5.
