Ten Minute Minestrone
The smaller the pasta, the quicker the prep time. Use tiny noodles, broken spaghetini, orzo, alphabets, etc. This winter warm-up is ideal for throwing a meal together after a long drive to the campground.
2 cups water
1/3 cup alphabet pasta
1 can condensed low sodium tomato soup
1 can low sodium vegetable beef soup
14-ounce can whole kernel corn, no salt added
14-ounce can of cut green beans, no salt added
15-ounce can of chili con carne with beans
Bring water to a boil and stir in pasta. Keep it at a low boil while stirring in soups, chili and undrained corn and beans. Cover and simmer until pasta is tender. Season to taste. Serves 6.
Optional: top each bowlful with a slab of shaved Parmesan cheese.
