Nothing Beats Meat 'n Potatoes

Two-Cheese Potato Casserole
    This rich side dish bakes in the oven while everyone at the campground potluck gathers around the grill. Cook fresh potatoes if you like or save time by using canned. Shave calories by using low-fat cheeses and sour cream.

3 cans, 14.5-ounce each, sliced potatoes
2 cups cottage cheese
1 cup sour cream
½ teaspoon each freshly ground pepper and sweet paprika
8-ounce package shredded Cheddar

    Drain and rinse potatoes. Whisk together cottage cheese, sour cream, salt and paprika. Put potatoes in a buttered casserole alternately with the cottage cheese mixture and some of the Cheddar, reserving a handful of the Cheddar to put on top. Bake uncovered at 350 degrees about 30 minutes or until bubbly and heated through. Serves 8.
