Everybody Loves Chili

Chili for Two
    If you’re an RVer who is also an empty nester it’s possible you never made chili for less than a crowd.  Here is a down-sized recipe that feeds two hearty eaters for one meal or one person for two meals.

1 tablespoon olive oil
Small onion, diced
Half a green pepper, seeded and diced
1 teaspoon minced garlic
2 teaspoons chili powder
1 1/3 cups vegetarian “meat” crumbles OR
8 to 10 ounces lean meat, cooked and crumbled
½  cup water
15-ounce can of diced tomatoes
8-ounce can kidney beans
Grated cheese (optional)
Crushed corn chips (optional)
Sour cream (optional)

    Sizzle onion, pepper and garlic in hot oil, gradually stirring in chili powder and crumbles. Add water, cover and cook 15 to 20 minutes over low heat until onion is tender. Stir in tomatoes and beans and heat through. Serve with one, two or all of the suggested toppings.

thanks Janet. We'll be giving this one atry asap. Hope you do many more recipes for two!~ We just hate to make more than we immediately need because to store it in the frig uses up all that room way too quick.
