Sweet Tart Rice Pudding
You never made such an easy dessert. It’s good for you, low in sugar and is easily doubled or quadrupled to serve at a campground potluck too. This recipe serves 6.
2 cups instant rice
Small can crushed pineapple
8-ounce carton lemon flavored yogurt
Drain pineapple and add water to the juice make 2 cups. Bring liquid to a boil, stir in instant rice, cover and let stand 7 to 10 minutes until rice is fluffy. Stir in pineapple and yogurt and spoon into dessert dishes. Serve now or chill. It can be served plain or top it with whipped cream, whipped topping or a few nuggets of dried pineapple.
Cook’s note: when making a large amount for a potluck serve it in a big bowl and provide small, disposable bowls for guests to help themselves.
