Chocolate! Chocolate! Chocolate!

Choc-Oat-Let Fudge Cookies
    Drop cookies aren’t high on my list of galley favorites. Bar cookies are quicker, easier and take less room in my small oven. However, baking cookies on a cold, rainy day is a satisfying pastime. It fills the RV with good smells and gives me an excuse to invite campground neighbors in for a cuppa and a card game.
    Buy the large (22 ounces) box of brownie mix. Quick oats may also be labeled 1-minute oats. Steel cut or instant oatmeal are not recommended for this recipe. The 30-minute waiting time is important. Don’t skip it.

22-ounce box of brownie mix
2 eggs
1 ½ cups quick oats
1 cup chopped nuts OR
1 cup dried cranberries or other dried fruit OR
1 cup chocolate, butterscotch or peanut butter chips
    Set the oven for 350 degrees. Grease a cookie sheet(s) or line with parchment paper. Spray parchment paper. Make up the brownie mix according to package directions, using two eggs. Fold in oats plus nuts, fruit or chips and let stand 30 minutes.
    Drop by the rounded teaspoonful on cookie sheets, allowing room to spread. Bake 10-12 minutes and cool on racks.
