Beans are Camping Basics

    This tasty dish is easily made vegetarian by using imitation bacon bits or none at all. Some curry powder is very spicy, some mild. Go easy until you find your own favorite brand.

Medium onion, diced
2 strips bacon, cut up OR
2 tablespoons vegetable oil and 2 tablespoons imitation bacon bits
2 teaspoon curry powder (more or less to taste)
1 teaspoon vinegar
15-ounce can sliced potatoes, drained and rinsed
15-ounce can kidney beans, drained and rinsed
2 or 3 hard-cooked eggs, cut up
Sour cream
    In a large, nonstick skillet, fry out bacon with onion or cook onion alone in the oil and add bacon bits later. When onion is tender, stir curry powder into bacon drippings or oil.  Add vinegar, potatoes and kidney beans to heat through. Stir in eggs and adjust seasonings. Serves 4 to 6. Top each portion with a dollop of sour cream.Serves 4 to 6.
