These easy, toothsome wraps are just right for a ride on the range or a quick lunch at the roadside.
For 8 burrito-size wraps you will need:
2 cucumbers, peeled and seeded
2 cans whole green beans, well drained
1 cup lite mayonnaise
½ teaspoon dillweed
16 slices good quality deli ham, roasted chicken or turkey
8 burrito-size flour tortillas
Cut cucumbers into long, thin strips. Sprinkle with salt and let stand 30 minutes. Pat dry with paper towels. Stir dillweed into mayo and use it to “butter” the tortillas. Arrange two slices meat plus portions of cucumber and green beans on tortillas and roll up, tucking in ends burrito style. Wrap in plastic wrap and keep cold. Best served on the day they’re made
Variations: Instead of green beans and cucumbers, try dilly beans or thin pickle spears with long, thin strips of carrot, jicama,, celery and other raw veggies.
