Eggs-zactly Right for Breakfast, Lunch or Dinner

Bird’s Nests and Eggs
6-serving packet instant mashed potato flakes
Butter flavor spray
6 slices pre-cooked bacon
6 eggs
Grated cheese (optional)
Salsa (optional)

    Spray 9 X 13-inch baking dish and set the oven for 350 degrees. Sprinkle potato flakes in the dish and stir in hot water until they are the consistency of mashed potatoes.  Smooth to an even layer. Spray lightly and evenly with butter-flavor oil
    With the back of a large spoon, make six evenly spaced nests in the potatoes. Cut bacon slices in half and put two pieces in each nest. Break an egg into each nest. Grated cheese can be put on the eggs before baking if you wish.
    Bake until eggs reach the desired done-ness This will depend on personal taste and on how hot the potatoes were when the eggs were added. Pass the salsa. Serves 6.
    Cook’s note: substitute six servings grits or cheese grits for the mashed potatoes.
