Something New in Salads
Dutch Apple Slaw
If you haven’t discovered tangy, tasty, curly endive try this offbeat salad from the Netherlands. It can also be made with chopped lettuce or other greens. With crusty bread it makes a satisfying lunch.
3 medium apples, cored and finely diced
Small red onion, finely diced
1 head curly endive, chopped fine (about 6 cups http://www.CreateAGorp.blogspot.com)
½ cup raisins
1/3 cup vinaigrette
1 teaspoon grainy mustard
Freshly ground pepper to taste
½ cup sunflower nuts
Combine apples, endive, onion and raisins. Stir mustard into vinaigrette and toss with the salad. Add pepper to taste. Sprinkle with sunflower nuts. Serves 6.
