Believe it! A Simple Skillet Dish You'll Love

Amazing! You don’t have to cook the macaroni first. Stir-frying it in hot oil gives it a toasty new taste too. Use fully cooked chicken bites from the supermarket or two cups of leftover chicken.

2 cups uncooked macaroni
Medium onion, diced
Medium green pepper, diced
1 teaspoon minced garlic
½ cup vegetable oil
6-ounce can tomato paste
2 ½ cups water
1 teaspoon mixed Italian seasoning
2 cups diced, cooked chicken
Salt, pepper to taste

Stir-fry the macaroni, onion, pepper and garlic in hot oil until vegetables are limp and pasta is golden. Add everything else but the chicken, salt and pepper. Bring to a boil, cover, reduce heat and cook, stirring once or twice, 20 minutes or until pasta is tender. Stir in chicken to heat through, adjust seasonings and serve. Serves 4 to 6.
