Go Nuts Over Chicken

Slow Lane Chicken Macadamia
6 portions skinless chicken
Salt, pepper, cinnamon sugar
3 large apples
½  cup apple juice
1 cup coarsely chopped macadamia nuts
3 large sweet potatoes, peeled and cut in half
½ stick butter
1/4 cup apple juice
Heaping tablespoon cornstarch
Wine or apple juice

    Grease the slow cooker and arrange chicken in it. Sprinkle with salt, pepper and a little cinnamon sugar. Peel and slice apples and arrange over chicken. Drizzle with apple juice and sprinkle with nuts. Arrange sweet potato halves over chicken and dot with bits of butter. Cook 6 to 8 hours on Low.
    Remove chicken and sweet potatoes, turn cooker to High and stir cornstarch and the 1/4 cup apple juice together. Stir into pan juices with apples and nuts until thickened. If sauce is too thick add a little wine, water or apple juice. Spoon sauce over chicken and sweet potatoes. Serves 6.
