Easy RV Meals Make Camping Fun

Scalloped Chicken
    A little chicken goes a long way when you make this flavorful and nutritious dish. Add a big salad and supper is served.


8-ounce package herbed stuffing mix
Hot water
10-ounce can chunk chicken, broken up
10-ounce jar or can  of chicken gravy
1 cup frozen peas
6 eggs
1/4 cup milk or cream
1/4 teaspoon nutmeg
    Add hot water to the stuffing mix just until it sticks together. Use the back of a big spoon to press it into the bottom and slightly up the sides of a greased 9 X 13-inch baking dish. Drain chicken and save juice. Scatter chicken over the stuffing. Drizzle with gravy. Scatter peas over mixture.
    Whisk eggs with milk or cream, juice from the chicken and nutmeg. Pour over casserole and bake at 325 degrees for 40 to 45 minutes or until eggs “set”. Let stand 5 minutes, then cut in squares and lift out with a pancake turner. Serves 6.
