Put This One on Ice

    Ice cream pies are among the easiest, yet most festive desserts for the RV cook.  This one is chunky, crunchy, sweet and  a snap to make. It can be varied each time by using different flavor chips or ice cream and different kinds of nuts.

1  ready-to-use pie crust, your own or store-bought, pastry or crumb
1 pint chocolate ice cream
1 pint coffee ice cream
½ cup miniature chocolate chips
½ chop chopped pecans
1 cup chocolate fudge sauce, slightly warmed
Whipped topping or aerosol whipped cream
    Take the ice cream of the freezer and put the crust in. When the ice cream has warmed just enough to dig out, bring out the crust. Using two tablespoons, dapple the crust with the two flavors of ice cream, alternating with teaspoons of fudge sauce and sprinklings of nuts and chips. Cover with plastic wrap and freeze.
    Take out of the freeze 20 minutes before serving. Cut in 6 or 8 wedges and top each serving with a mound of cream.
