Quickie Corn Salsa
Nothing perks up meals better than a zesty salsa. Try this on anything from fresh-caught fish to meat from the grill or casseroles from the RV oven.
15-ounce can whole kernel corn, drained
1 packet lemon-lime Emergen-C
½ cup bottled salsa (mild, medium or hot)
Small can sliced ripe olives, drained
Save 2 tablespoons liquid from the corn and put it in a medium bowl with the Emergen-C. Mix well, then stir in corn, salsa and olives.Serves 4 as a condiment.
Not familiar with Emergen-C? It's a fruit drink mix loaded with vitamins and sold in WalMart, supermarkets and drug stores. Each packet makes a glass of beverage but I use it in a lot of it in recipes too.
