Janet Groene'sCouCou Casserole
In the Caribbean, dishes made with cornmeal are named some variation of the term "coucou". In the islands, callaloo would be used in this nourishing, economical casserole but spinach is an excellent substitute. Bring this casserole to a potluck or serve it as main course in a vegetarian meal.
1 cup yellow corn grits
4 cups boiling water
10-ounce package chopped spinach, thawed and squeezed dry
2 eggs, well beaten
6-ounce package garlic-herb soft cheese such as Allouette
Stir grits into boiling water and keep stirring as grits gradually thicken. Stir in spinach. When grits are thick as fluffy mashed potatoes, remove from heat and stir in beaten eggs and cheese. Stir to combine well. Put in a sprayed 9 X 13-inch dish and bake now or cool and chill for later baking.
Bake at 325 degrees for 35 minutes to 60 minutes. If you make it and bake it at once, time will be shorter. If it has been chilled, allow more time. Let stand 10 minutes and cut in 12 squares.
