Sticks and Stones Make Good Snacks

    This low-sugar recipe makes a delicious, munchy dessert or a filling energizer on the trail. Eat it at the wheel or give it to restless kids in the back seat. It’s easily stirred up in the kitchen to take RV-ing and it’s also not difficult to make in the RV galley.

8 cups plain popped corn
2 cups unsweetened round oat cereal
2 cups roasted almonds
1 cup raisins
3 cups small marshmallows
½ stick butter
    Pick over popcorn to remove “old maids” and put it in a large greased bowl with the cereal, almonds and raisins. Stir to mix. In a microwave-safe container melt the butter and marshmallows. Spray a spatula and fold everything together until well mixed.   While the mixture is hot, work quickly with two sprayed tablespoons to put mounds of the mixture on sheets of waxed paper or baker’s parchment. Let cool completely and wrap individually. 
Cook's note: My galley doesn't have a bowl large enough for this so I use a clean dishpan, then fill it with hot, soapy water to wash other dishes including those I used in this recipe.
