Rainy Day Lamb Bake
Use the same lamb you’d use for shish kebab on the grill, but this dish bakes in the oven. It's ideal for a cold, rainy day when you don't want to grill outdoors. Nuke some baking potatoes to cook partially, then finish them in the same oven and dinner is served.
2 ½ pounds bite-size lamb cubes, patted dry
1 ½ cups dry bread crumbs
1/4 cup dried parsley flakes
1 tablespoon garlic powder
2 teaspoons salt
½ teaspoon pepper
Mix dry ingredients in a large bag, add lamb cubes and shake to coat. Put lamb cubes in an even layer in a greased, 9 X 13-inch baking pan. Sprinkle leftover bread crumb mixture on top. Bake 15 minutes at 350 degrees, stir, then bake another 15 to 30 minutes until lamb cubes are toasty brown.
