Quick as a Wink RV Skillet Meal

Corned Beef Lickety Skillet
Your mail to me at janetgroene (at) tells me you like easy, one-pot recipes best. Here's one your meat-and-potatoes crew will like.

1 slice bacon, cut up
2 cans, 15 ounces each, sliced potatoes
Small onion (optional)
1 package shredded cabbage (cold slaw mix)
12-ounce can corned beef
Squirt bottle of Dijon-style mustard
Optional:  squirt bottle ketchup or grated cheese or both

    Fry out bacon in a large skillet. Open cans of potatoes and, holding lid in place, drain potatoes. Fill with water and drain well.  Arrange potatoes over bacon bits and fat, top with sliced onion and cabbage. Using two teaspoons, dot top with blobs of corned beef. Drizzle very lightly with mustard. Cover and cook over low heat until cabbage is tender. Stir and serve.  Serves 4. Optional: Top the hot, finished skillet with tufts of grated Cheddar cheese and let stand a few minutes until cheese melts. Pass the ketchup. 

Cook's note: 4 or 5 medium potatoes, scrubbed and diced, can be substituted for canned potatoes. Allow extra cooking time for potatoes to get tender.
