Ravishing Rice for Ravenous RV-ers

Roundup Rice
Round up the gang and have a hot, potluck dish on the campground table in mere minutes, thanks to the new pouches of ready-to-serve Spanish rice. Add meat to make it a main dish or omit meat and serve it as a side dish with steaks or burgers from the grill.

3 pouches, 8.8 ounces each, ready-to-serve Spanish rice
2 cans, 15- or 16-ounces each, red beans, drained and rinsed 
2 cans, 15 ounces each, -ounce can diced tomatoes with onion and green pepper
10-ounce can corn with green and red pepper, drained
Small can diced chilies, drained
Minced cilantro (optional)
12-ounce kielbasa sausage, cut up (optional)
Hot sauce (optional)

    In a roomy saucepan or kettle mix  rice, beans,  tomatoes and chiles. Heat over very low flame until it’s steamy. Fold in kielbasa if using. Just before serving, sprinkle with minced cilantro if you have some Pass the hot sauce. This can also be heated in a covered, microware container on High heat for about 5 to 7 minutes or until heated through.  Turn dish after each minute. Serves 10.
