Meanderer’s Meatloaf Pie
8-ounce can tomato sauce
½ cup dry bread crumbs
Small onion, finely chopped
1/4 cup finely chopped stuffed olives
1 pound lean ground beef
2 cups ready-to-eat white or brown rice
1/4 cup tomato sauce
8-ounce package grated Cheddar cheese
Combine half the tomato sauce (1/2 cup), bread crumbs, vegetables and beef. Mix well, turn into a pie plate and pat evenly on bottom and sides to form a “pie” crust. Flute edges. Sprinkle lightly with salt and pepper.
Combine remaining tomato sauce with the rice and half the cheese. Put rice in the beef crust, cover loosely with foil and bake at 350 degrees 30 to 45 minutes or until beef tests done with an instant-read thermometer. Uncover top, sprinkle with remaining cheese and bake 5 minutes more. Let stand 10 minutes, then cut into wedges. Makes 4 big maindish servings or cut in smaller wedges for a campground potluck.
Cook's note: keep disposable plastic gloves on hand for mixing and shaping meatloaf.
