On a cold day, fill your RV with good smells while this casserole bakes in the oven or slow cooker. The recipe is easily doubled or tripled. Add scrubbed baking potatoes for the last 90 minutes of oven time. This also works well with mashed potatoes, rice or noodles or, for the simplest meal, just serve a bowl of beef with chunks of French bread for mopping up the gravy.
1/4 cup dry bread crumbs
1/4 cup flour
2 teaspoons seasoned salt
1 teaspoon onion powder
1 ½ pounds lean beef, cut in bite size
1 cup dry red wine
1 cup hot water
1 beef bouillon cube
Combine crumbs, flour, salt and onion powder. Put beef in a sprayed slow cooker or casserole and toss well with the dry mixture. Dissolve bouillon in hot water and pour gently over coated beef. Drizzle with red wine. Cover and bake 3 hours at 325 degrees or cook in slow cooker 6 hours on Low or 4 hours on High. Serves 6. Leftovers are are sublime!
