Ham Bedrolls

Don’t forget to bring ingredients needed to complete the Hollandaise sauce according to package directions. They vary according to brand.

8 large (burrito size) flour tortillas
1 ½ pounds deli baked ham*
2 cans whole green beans, well drained
8-ounce package grated Cheddar cheese
2 packets Hollandaise sauce mix

“Butter” each tortilla with mayo. Cut the ham in strips. On each tortilla place portions of ham, cheese and green beans. Roll up and arrange, seam down, in a lightly greased baking dish. Do not crowd rolls. They need only to be heated in your oven, microwave or covered grill until cheese melts. Meanwhile make the Hollandaise and spoon it hot over the heated rolls just before serving. Serves 6 to 8.
*Ask the deli to slice the ham about 1/4 inch thick.
Cook’s Note: for a smaller crew, make up all the “bedrolls” and refrigerate those that aren't needed right now. Heat as heeded. Leftover Hollandaise should be refrigerated. Reheat as needed.
