Great Eats for Springtime Camping

Pancakes for Two

Serve these meaty pancakes for supper topped with applesauce, sour cream or gravy. A small can of chunk chicken is just enough. Keep a bag of frozen hash browns in your freezer or ice chest for recipes like this one. If you don't have a freezer, it's OK if they thaw in the icebox. Use within 3 or 4 days.

1 cup biscuit mix
1 cup milk
1 egg
I cup cooked, shredded chicken
3/4 cup grated Cheddar
1 cup hashed brown potatoes
1 tablespoon dried, diced onions
In a medium bowl whisk together biscuit mix, milk and egg. Fold in chicken, cheese, potato and onions. Cook on a greased griddle, as for pancakes, until golden on both sides. Serves 2.
