Coming Soon!

For all of you RVers who have a convection oven in your RV and asked (begged) for a cookbook to help you make the best use of it, your wait will soon be over. Tentative publication date for the downloadable eBook is June 1, 2007, although I'm going to try to finish and have it online before Memorial Day weekend. The working title is I’ve Got a Convection Oven in My RV: Now What? by Adrienne Kristine, M.A. and Andrea Laudate (MaMa L). MaMa L is a brilliant chef who teaches cooking classes and is a part-time RVer. There are recipes for appetizers, entrees for two, desserts, and potluck meals to share, all of which can be prepared in your convection oven. There are also recipes for that small Thanksgiving turkey you've always wanted to prepare. Included are suggestions for the pots and pans you can use in a convection oven that you haven't been able to use in your microwave, including cast iron cookware.

Just to whet your appetite:

Cornsticks (crunchy cornbread sticks)
Tomato mozzarella bake
Sausage, beans and greens
Chicken divan
Polenta cake
Sweet potato bisque with caramelized onions
Salmon with apricot and balsamic glaze

and for potlucks:
Bacon baked beans
Broccoli rice casserole
